Bikini

Yields 10 servings

Ingredients for the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Cocktail (makes 850ml, serving 10)

400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

For the Syrup: Put the listed items inside a saucepan, bring to a light boil, stirring until the sugar dissolves. After that, remove from the heat and leave to cool down entirely. Pour into an sealable bottle, cap it and store in the fridge, it will last for around four weeks.

For the Premix: Combine all the liquids into a large bottle, let it rest for one hour, then filter it best through a fine cloth, making it perfectly clear.

For serving: Pour 85ml from the premix into a stirring glass filled with ice, and stir gently for a minute to chill. Pour into a chilled martini glass or a similar vessel, top with some cranberries and finish using a brief mist with the mandarin essence over the drink.
